Peppermint Meltaways

A Holiday Party Snack

Ingredients:

1 Cup Butter (softened)

1/2 Cup Powered Sugar

1/2 Teaspoon Peppermint Extract

1-11/4 Cups of All Purpose Flour

1/2 Cup of Cornstarch

Frosting:

1/3 Cup of Butter

3 Cups Powered Sugar

1 Tablespoon Milk

Baking:

Start by putting the butter in mixing bowl and beat for 3 minutes. The butter should have a creamy/fluffy texture to it. Add the powered sugar and peppermint extract. Beat till creamy and scrap the bowl to ensure it's fully mixed. In a different bowl mix the cornstarch and flour together. Add the flour and cornstarch mixture, little but little to the mixing bowl until its well mixed. Remember to scrap the bowl with spatula to ensure its mixed throughly as you add. Place this is the fridge for 1 hour. Preheat the oven to 350 degrees. Take the mixture out of the fridge and let it set for 10 to 15 minutes. When it's right out of the fridge it's hard to work with. Take a cookie sheet and make 1 inch balls with the dough placing them on the tray. Cook for 15 minutes or till golden brown around the edges. Place them on a cooling rack and let them cool off.

Frosting:

We used butter cream frosting for our melt aways. While this is easy to make at times I do add more milk to make the frosting creamer. It is all personal preference though on how you want the consistency of the frosting to be, I used the whole tablespoon. Put the butter in a mixing bowl and beat on medium for three to four minutes. It should look creamy. Slowly add 1 cup of powered sugar at a time. While adding powered sugar I like to slowly add a tiny splash of milk with each cup. This causes the frosting to remain creamy and not lumpy letting it mix together easier as you make the frosting. For the best part! Taste when done, it should be nice Christmas sugar rush! Place on cooled cookies and decorate with all the Christmas flare.
