Butter Biscuits

These Biscuits are the Jam!

Ingredients:

1/2 Cup of Frozen Butter

2 Cups All-Purpose Flour

2 Tablespoons of Sugar

1 Tablespoon of Baking Power

1 Teaspoon of Salt

1 Cup of Milk


Preheat the Oven to 450°f (210°c).

Whisk flour, sugar, baking powder and salt together, set aside.

Grade frozen butter with a cheese grater (note: attempt to keep the butter as frozen as possible while making these biscuits.

Mix butter with the dry ingredients till they resemble fine crumbs.

Add the milk gradually till the dough leaves the side of the bowl. (Note: too much milk can make your dough sticky and not enough makes the biscuits to dry.)

Turn the dough on a lightly floured surface, I find using gloves helps roll out the dough.

The less you roll out or work the dough, the fluffier and flakier biscuit you get!

I prefer to not use a rolling pin to roll my biscuits out and do this by hand. The faster you work to keep the dough cool the better. This keeps the gluten from increasing which makes for a harder less fluffy biscuit. Using a lightly floured biscuit cutter or glass cut out biscuits and place them on an un-greased cookie sheet 1 inch apart.


Bake for 10-12 mins depending on the size they might need more time.
